Saluzzo white hen, marinated with extra virgin olive oil

Cooking time: 45 minutes
Ingredients for 4 servings:
White hen of Saluzzo No. 1
Celery 100 g
Carrots 100 g
Onions 150 g
Cloves as needed
Black peppercorns as needed
Sage as needed
Bay leaves as needed
No. 4 cloves of garlic
Extra virgin Ligurian olive oil as needed
Mixed salad greens as needed
PROCEDURE
Prepare a vegetable stock with the vegetables, the cloves and the bay leaves, add the eviscerated and rinsed hen and cook for about two hours. Let the hen cool in its own broth, in order to keep it soft.
Remove the meat from the hen, season with salt and black pepper and place in a glass jar, alternating the meat with sage leaves and garlic cloves. Cover with plenty of extra virgin Ligurian olive oil, and marinate for at least 24 hours. Serve with salad.
