Board pizza

Cucina: Lazio – Rome
Preparazione: 60 minutes
Ingredients for 4 servings
Strong “00” Flour 1,6 kg
Water 1 lt
Dry yeast 1 g
Salt 35 gr
Extra virgin olive oil 20 g
PROCEDURE
Put the flour and yeast into the kneading machine and add 55% of the water, then after 5 minutes stop the kneading machine for 20 minutes. Start the kneading machine again and add the salt and 1/3 of the remaining water. After 1 minute switch to the second speed and after 2 minutes add the oil and once absorbed add the remaining water a little by little. Prepare balls of dough weighing 1, 2 kg and let rise at room temperature for 30 minutes. Then stretch them out and let them rise for another 30 minutes at room temperature. Knead them again and then stretch them out again and let rise for 2 more hours. Spread ingredients to your liking onto the pizza and bake in a 300°C oven for about 12 minutes.
