Rustic Panzanella

Cucina: Tuscany – Vegetarian
Cooking times: 40 minutes
Ingredients for 4 servings
No. 4 Loaves of homemade bread homemade
Spring onions 200 g
Cucumber 100 g
White celery 120 g
Ripe tomatoes 160 g
Lettuce 400 g
Basil 50 g
Extra virgin olive oil 120 g
Red wine vinegar as needed
Salt and Pepper as needed
Tuna in oil 80 g
Oregano 3 g
Salted anchovies 20 g

PROCEDURE
Cut the loaves in half toward the width and moisten with water to soften them. Finely chop the onions and put them to soak in vinegar and water for about an hour to remove the strong aroma. In a bowl put the part of the inner soft part of the squeezed bread, shredded and chopped. Add the diced tomatoes previously removed of seeds and peeled, add the cucumbers, the celery, the lettuce and basil all cut into strips. Finally add the chopped tuna in oil and the desalinated and chopped anchovies. Season with vinegar, salt, pepper, oregano and extra virgin olive oil. Serve this rich salad inside the wet loaf.
